Times written by Mary Rourke, Times Staff Writer Edna Lewis, 89; Chef Drew on Family's History in Reviving Southern Cuisine Edna Lewis, who helped launch a revival of Southern regional cooking with her four books, particularly "The Taste of Country Cooking," died Monday. She was 89. Lewis died of natural causes in her sleep at her home in Decatur, Ga., Scott Peacock, a longtime friend and Lewis' housemate in recent years, told The Times. She had been in failing health for several years and suffered from dementia. The granddaughter of freed slaves in Freetown, a Virginia farming community, Lewis had an eclectic career working as a restaurant chef, a pheasant farmer and a cooking teacher, among other things. But her cookbooks brought her national recognition. Along with "The Taste of Country Cooking" in 1976, she wrote "The Edna Lewis Cookbook" in 1972 and "In Pursuit of Flavor" in 1988. She and Peacock wrote "The Gift of Southern Cooking" in 2003. "Edna was a very important voice for her knowledge of Virginia-style Southern food and cooking," Judith Jones, Lewis' editor at Alfred A. Knopf publishers, told The Times in 2003. "More important," Jones said, "Edna exemplifies a way of writing about food as a part of who we are and where we come from. It is food writing as memoir." Some food experts referred to Lewis as the leading African American female chef. Others placed her as the dean of all Southern cooking. Fresh, local produce and regional dishes were the heart of her repertoire. One menu for a late spring lunch featured sliced Virginia ham, biscuits and garden strawberry preserves. "Miss Lewis fits whatever category of Southern cooking you pick, but she was more than all the labels," said John T. Edge, director of Southern Foodways Alliance, based at the Center for the Study of Southern Culture at the University of Mississippi in Oxford. In several of her books, she wrote about her early years in Freetown. Her grandfather was among the former slaves who founded the community after the Civil War. Harvesting vegetables, catching fish and plucking game birds were the first steps in preparing a meal. "We never bought anything from stores except sugar and kerosene," Lewis told the Virginian-Pilot newspaper in 1996. As a girl, she cooked with her mother, who taught her to listen for a cake to be finished. "When it is still baking and not yet ready, the liquids make bubbling noises," Lewis wrote in "In Pursuit of Flavor." Lewis' father died when she was 9. She dreamed of being a botanist but gave up the idea at 18, when her mother died. She moved to New York City looking for work in the early 1940s. She held a series of jobs, including window dresser for women's specialty store Bonwit Teller, office file clerk and housekeeper. She often cooked for her friends. One of them, John Nicholson, owned an antique shop. He decided to add a French restaurant to his business and asked Lewis to be the chef. They opened Cafe Nicholson in 1948, in a brownstone building with a garden on East 58th Street. Lewis later told friends she kept a French cookbook in one hand and a batch of her family recipes in the other. "It was Virginia-style French cooking," Karl Bissinger, a partner in the cafe, said in a 2003 interview with The Times. "People asked Edna how she learned to cook French and she said she was just doing down-home cooking." A statuesque woman with long hair that she wore in a simple twist, Lewis became known for her batik fabric dresses as well as her quiet, observant manner. She rarely spoke of her personal life. She was proud of her heritage but showed it in subtle ways, Jones said. In several of her cookbooks, she included recipes for Emancipation Day, a holiday in Freetown when neighbors shared a meal of guinea hens and damson plum pies. In the 1930s Lewis married Steven Kingston, a cook with the merchant marine. They were political activists who joined the Communist Party. "I was a radical," Lewis told Bon Appetit magazine in November 2001. She worked in the office of the Daily Worker, the Communist newspaper. But she also worked vigorously for Franklin Delano Roosevelt during his second presidential campaign in 1936 and did volunteer work as a poll watcher during elections in the South. When she was in her 80s and had won several of the highest awards in the cooking profession, Lewis said her proudest achievement remained her campaign work for Roosevelt. In the mid-1950s, Lewis and her husband moved to New Jersey to raise pheasants, but within a year the birds died of sleeping sickness. Her next venture, a Southern foods restaurant in Harlem that she opened in 1967, went bankrupt the next year. "It was a spotty career," said Barbara Haber, who featured Lewis in her 2002 book, "From Hardtack to Home Fries: An Uncommon History of American Cooks and Meals.""If an opportunity came, Edna went with it," Haber said. "She didn't have a career plan." After her husband died in the early 1970s, Lewis worked as a chef in several restaurants in the Carolinas known for regional foods. Here in Ithaca it dumped nearly a foot of snow in the hills, although the valleys saw no accumulation. Now, several days later, the snow is all but gone again, the sun is shining, and the birds are itching to move. It's been a very weird spring. We had excellent weather in March, with strong movements of waterfowl (which normally are the first group to migrate) through the Cayuga Lake Basin. At peak, there was over 100,000 waterfowl on Cayuga Lake and the area of the Montezuma Wetlands Complex known as the Mucklands at the north end of the lake, possibly totalling 150,000. The numbers were staggering. There was also a decent push of early hawks through the region, and some of the early migrants (Phoebe, blackbirds, etc.) arrived. Then the cold hit, and very little new birds trickled in. Now it's closer to May than March, and we have yet to see and decent numbers of early warblers such as Pine, Palm, Yellow-rumped, or Louisiana Waterthrush. That's going to change shortly. Here's a few images pulled from regional radars tonight on www.wunderground.com. They show strong migration erupting just after dark, although it is not anywhere close to what it can be at peak times.

Today, we visited a San vilage and also went out for a bushwalk with a number of them where they showed us how they looked and found roots, leaves, nuts and fruits, all of which had special powers. They also recreated a hunt for us.. although the 'black' (as they call them) dominated government here in Namibia have banned them from hunting (after the whote apartheid rulers had forciblky moved them onto their current lands). The San have been living in these parts for the last 25,000 years, so have been a lot more successful than any other civilisation in our historical perspective. One pity was that at the scvhool which we were shown around, they are forced to learn evrything in English rather than their own language with all the clicks! But still, the school seemed quite well provided for by the governemnt. Many m,any mothers were carrying babies and there were lots and lots of children. By all accounts San people keep having children until they can no longer have them.... Tomorrow we are off to Etosha to look for and watch game for three days... hopefully we will finally get to see our male lion, and who knows what else. I have purchased a volume of African birds south of the Sahara so we will spend much time trying to identify all the birds we come across. See you again on Monday... and all is well with Fred... just a little bit too lazy to write a blog! At the gate yesterday morning in the light rain we see what look like two dogs on the road. They are black backed jackals. A little further on we meet another customer walking down the road (it is still very early). It is a young male lion, our first. Still further, we see some wt looking springbok. Then a fight between a jackal and three beautiful spotted hyenas, most going on beghind bushes so we cannot see exactly what is going on, but amazingly the jackal escapes with the meat! Then a large number of zebras, a few giraffes, some hartebeest, some wildebeest, an odd steenbok, a few kudu and so on. In the meantime I am identifying all sorts of birds (list to be published in next blog... but includes the ostrich, the secretary bird and many raptors). At the waterhole in the evening, after a beautiful sunset and night has set in we arrive ton see and hear a spoted hyena drinking water. He leaves. It is still save for a drongo catching insects in the nightlights. Then along comes a makle elephant, looking white in the light... he make a tour of the hole and sdtays with us for half an hour while he drinks and splashes around and comes very close to Fred, reaching out with his trunk. Incredible to hear everything in the silence, as opposed to just watching. Today starts off with a nervous jackal or two at the same waterghole (near our campsite), followed by springbok, hartebeest and four handsome male kudis. Fred calls me back for breakfast and we depart. Two lionesses at a waterhole. An old lion by the side of teh road, face showing many scars, his paws open with recent wounds, a massive mane and yellow teeth and pink tongue. We are thrilled! And later this afternoon..... a pride of lions.... four young babies, a number of mothers, some juveniles and a young male all together, an older male somewhat further off. Fifteen in total. We spend the rest of the afternoon with them while firsdt they rest then start to wealk around, looking and smelling the zebra and ostrioch nearby. Four young go off by themselves while the mothers are still resting... the mothers follow and eventually so do the males. Beautiful beautiful strong animals... this sort of experience really makes a three day trip like this worthwhile.. a once in a lifetime experience. Back at camp now, watched the sunset, while the others are preparing potjie. We are well satisfied. (Picture here from Zambia... Etosha pics to be uploaded Monday or Tuesday). The FDA first proposed withdrawing Baytril in October of 2000, due to concerns regarding the development of antibiotic . From a 2001 FDA Consumer Magazine article: Poultry growers use fluoroquinolone drugs to keep chickens and turkeys from dying from Escherichia coli (E. coli) infection, a disease that they could pick up from their own droppings. But the size of flocks precludes testing and treating individual chickens--so when a veterinarian diagnoses an infected bird, the farmers treat the whole flock by adding the drug to its drinking water. While the drug may cure the E. coli bacteria in the poultry, another kind of bacteria--Campylobacter--may build up resistance to these drugs. And that's the root of the problem. People who consume chicken or turkey contaminated with fluoroquinolone-resistant Campylobacter are at risk of becoming infected with a bacteria that current drugs can't easily kill. Campylobacter is the most common bacterial cause of diarrheal illness in the United States, according to the Centers for Disease Control and Prevention. It's estimated to affect over 2 million persons every year, or 1 percent of the population. Commonly found in chickens, Campylobacter doesn't make the birds sick. But humans who eat the bacteria-contaminated birds may develop fever, diarrhea, and abdominal cramps. In people with weakened immune systems, Campylobacter can be life-threatening. Eating undercooked chicken or turkey, or other food that has been contaminated from contact with raw poultry, is a frequent source of Campylobacter infection. Not washing utensils, countertops, cutting boards, sponges, or hands after coming into contact with raw poultry can also spread the bacteria and cause infection. People infected with Campylobacter may be prescribed a fluoroquinolone--which may or may not work. But the damage doesn't stop there. "Cross-resistance occurs throughout this class of drugs," says Stephen F. Sundlof, DVM, PhD, director of CVM. "So resistance to one fluoroquinolone can compromise the effectiveness of all fluoroquinolone drugs." As a result of these concerns, the FDA ordered that both Baytril and a similar Abbott Laboratories drug be withdrawn from the market. Abbott complied with the ruling, and Bayer appealed. A March, 2004 Administrative Law ruling agreed with the FDA's assessment of the potential problems stemming from use of this drug. Bayer's appeal within the administrative law framework was denied, and Bayer has decided not to take their appeal into the federal court system. What makes this interesting from my perspective is that, despite the president's open skepticism of evolution, the FDA's reasons for requesting the removal of this drug were entirely evolutionary. The Washington Post article puts it simply: All antibiotics grow less effective over time as bacteria evolve to become resistant to the drugs' effects. Experts say wider use of an antibiotic -- by either animals or people -- leads to a speedier development of resistance. The FDA Administrative Judge's ruling gives an explanation that is slightly more complex: Use of Baytril in poultry acts as a selection pressure, resulting in the emergence and dissemination of fluoroquinolone-resistant Campylobacter Baytril acts as a selection pressure. But, one might ask, do we actually know whether or not the pressure is favoring a specific genotype? Is there a "resistance gene" in this bacteria? If so, do we know the sequence of mutations that lead to this? In this case, we do. Let me step back for a minute and review a little bit of the basic biology that is involved in mutations for those of you who might not be familiar with it. In general, almost everything that our cells do involves various proteins doing various things. Our cells make the proteins based on the instructions found in our DNA. Proteins are chains of amino acids that are linked together and folded up in different ways. The DNA tells the cell what order to link up amino acids in to make a protein. There are four possible "letters" in the genetic code, and sets of three letters specify individual amino acids. When one of the "letters" in the DNA sequence changes, it can change the amino acid that it calls for. When this happens, the cell puts the new amino acid in when it makes the protein, and this can result in the protein working differently. (For more information on this, follow the links in the paragraph.) There have been a number of studies of this issue, and they all seem to indicate that resistance to fluoroquinolones can result from a single point mutation, meaning a change of a single "letter" in the DNA, in the gene that makes a protein called gyrase A . Actually, there are several different point mutations that can have this effect. Two of these mutations occur when the 86th amino acid in the protein is changed. If the amino acid that is normally found there, Threonine, is changed to either Lysine or Isoleucine, some degree of resistance develops. Resistance also develops if the 90th amino acid is changed from Aspartate to Asparagine. Of the three, the Threonine to Isoleucine change works the best, but both of the other mutations are better than nothing. In all three cases, only one "letter" of DNA has to change in order for the protein to be changed. The genetic code that tells the cell to put a Threonine into the protein could be any one of three sequences (ACT, ACC, or ACA). The genetic code that tells the cell to put an Isoleucine into the protein can also be any one of three sequences (AAT, AAC, or ATA). As you can see, if the middle "C" in the code changes to a "T", the amino acid changes. If "ACA" is changed to "AAA", the Threonine is replaced with Lysine. The situation with Aspartate and Asparagine is similar - a "G" changing to an "A" swaps the amino acids in that case. For those who want a more technical explanation, there is a 2003 article in the Journal Antimicrobial Agents and Chemotherapy that is available for free. Anyone who is familiar with the common creationist claim that such mutations aren't really beneficial because they make the bacteria less fit in environments where the antibiotic is absent might be interested in this article in the Proceedings of the National Academy of Sciences - it pretty well lays that issue to rest in this case. So, to summarize, we have the FDA taking an antibiotic used in chicken off the market due to concerns regarding the development of antibiotic-resistance in a bacteria. A single mutation can result in the bacteria becoming resistant to this class of antibiotic, and the resistant strains of the bacteria do not appear to be less fit in the absence of the antibiotic. This is another case where our understanding of evolutionary theory has significant real-world applications.
